Cut Through the FOG assesses a charge based on the pollutants discharged by commercial food service establishments. Use the rate calculation worksheet and instruction sheet below to calculate your Cut Through the FOG charges.

Rates may be reduced by implementing any one or any combination of the following best management practices:

• Install and properly maintain a grease interceptor that is appropriate for your facility.
• Remove food grinders (aka garbage disposals).
• Participate in an approved commercial food composting program.
• Participate in an approved commercial food donation program.
